We are a small team headed by Ed Pook and Chris Bain.

Ed will be taking charge of offering you Dumfries and Galloway on a plate.  Working closely with local suppliers as well as foraging and collecting ingredients, his aim is to bring the best raw ingredients to the dishes. With his experienced kitchen team they will turn them into innovative tastes of the region.

Chris brings a wealth of wine knowledge as well as a passion for educating both our guests and staff in the world of wine and spirits. His experience of the restaurant and bar trade as well as his innate sense of hospitality will complement the food and bring you a full taste of the region.
